1. Mix the flour and salt together in a bowl. Add the butter and toss to coat each cube in flour. 2. Flatten each piece of butter by gently pressing between your fingertips. 3. Pour in the water and mix until a dough forms and no dry flour remains. Wrap and refrigerate the dough for 30 minutes. 4. Remove the dough from the fridge, roll into a rectangle, and fold in thirds. 5. Rotate the dough 90 degrees and repeat this rolling and folding one more time. Wrap and refrigerate for another 30 minutes. 6. When 30 minutes is up, remove the dough from the fridge, unwrap, and roll, fold, and rotate two more times for a total of 4 folds. 7. Refrigerate the dough for at least 30 more minutes before using.
